Having a career spanning more than 3 decades, my appreciation for the work that myself and my colleagues have in front of us has grown more and more each day. The years honing my skills on Vancouver Island , British Columbia, Canada, where local fishermen and farmers have taken a lead on bio-dynamic and organic growing and harvesting their wares have greatly influenced my outlook on “NOURISHING GENTLY
To me that means paying careful attention to the ingredients we use to nourish our customers. How they are sourced, harvested and grown. Leaving as little impact on the environment as possible. Without the use of chemicals and with respect to nature.
I’ve had the responsibility and privilege of being a personal touring chef for a number of celebrities such as Steve Martin, Ziggy Marley, The Beachboys, Burton Cummings Alice Cooper and others. But more importantly creating classic and modern French, Italian Asian and Fusion dishes for everyday people. Never truly knowing what part that meal will play in their day. Perhaps a marriage proposal, a graduation celebration, or perhaps a celebration a promotion at work. Whatever the occasion, I believe as a chef, this task to be taken seriously.
The bounty of fresh healthy food in Southeast Asia reminds me of my previous home. The local chefs and servers I work with inspire me! The welcome I’ve received has been heart-warming. The local resort owners have supported a major kitchen renovation to allow for this new direction of entirely in-house food preparation of local organic, bio-dynamic and seasonal cuisine.
